There’s a few things in life that make things worth it:

food with people you love

A few weekends ago my family got together for a cook out and there were tons of amazing foods. We had home cooked comfort foods: grilled chicken, potato salad, and macaroons, just to name a few. But my favorite was one that my step mom made: keto broccoli salad. She used 1 cup mayo, 2 Tbsp apple cider vinegar, and 3 Tbsp Truvia sugar substitute as the base. Although she used cranberries, so it wasn’t completely keto, she used pecans, broccoli, and it went so well together.

Another surprising dish she made was keto mashed cauliflower, with a ton of butter, crushed red pepper flakes, and light cajun seasoning. This was surprising because the person who was interested in the “real” potato salad also liked the mashed cauliflower, and they weren’t expecting to like it so much.

peanut butter cookies

I tend to eat when I’m hungry or nervous. Lately, I’ve been working on changing jobs. I accepted an offer the other day and had not been able to sleep well the night before due to nerves on how I’d tell my boss I was leaving. I love my company and team, and it’s hard to say goodbye to something good. The new job will pay more and is a change in industry, a change I honestly never thought would come.

If not eating the past few days is an indication that something is wrong, I think cookies is a good sign. I made these today. The recipe uses chunky peanut butter instead of smooth and I think I like the texture better:

1 cup chunky peanut butter, 1/2 cup swerve (1/2 white granular, 1/2 brown), 1 tsp vanilla extract, 2 Tbsp keto flour, 1 egg, chopped 72% dark chocolate, small handful dark sugar free chocolate chips

Mix up in a large bowl, form into balls, and set in a cookie pan.

Cook 375 degrees Fahrenheit 12 minutes.

I’ve been having dessert that’s so good I’d probably have it with every meal in a parallel universe.

sugar free chocolate pudding, instant from a box, just mix in 3 cups heavy cream and it sets in 5 minutes

keto peanut butter chocolate chip cookies

mix 3/4 peanut butter, 1/4 Swerve (I do 50/50 brown/white blend), 1 egg, 2 Tbsp keto flour, 1 tsp vanilla, sugar free dark chocolate cut into chunks

bake 350 degrees F 12 minutes, let cool 10 minutes

The pudding’s pretty filling, I take two Tbsp and add it to a bowl w the whipped cream and a cookie or two, sometimes pair it with a glass of unsweetened almond milk.

2 poached eggs, 1 slice bacon, 1/2 avocado, 1 slice rye toast w butter, 1 mug coffee w 1 scoop coconut vanilla MCT powder oil, heavy cream

12:30pm

shirataki noodles fried w sesame seed oil, topped w cheese sauce made w heavy cream, cream cheese, parmesan, asiago, Greek Yogurt, baked topped w crushed pork rinds, 1 row dark sugar free chocolate topped w peanut butter

5:30pm

1 keto chocolate chip muffin grilled in butter, topped with peanut butter

Here is what I ate today:

10:30am

2 poached eggs, 1/2 avocado, 1 keto cinnamon roll, 1 keto coffee w scoop vanilla coconut MCT oil powder and heavy cream

4:00pm

fresh sticks of broccoli and celery, guacamole, salsa, and three ham and cheese wraps, 1 bite of lemon poppy doughnut hole, dark chocolate w peanut butter

the recipe for keto cinnamon rolls (makes 2):

2 egg yolks, 2 tsp vanilla, 1 Tbsp melted butter, mix together
add 1 cup keto flour, 6 Tbsp keto confectioners sugar, 1 tsp xanthum gum, 1/2 baking powder 1/2 tsp salt, mix w wet ingredients
roll flat on parchment paper into a rectangle shape of 8″long x 1″wide, sprinkle w cinnamon and brown swerve
cook at 350 degrees for 15 minutes
glaze 2 Tbsp confectioners sugar 1 Tbsp heavy cream stir

8:00am

two poached eggs with lightly sprinkled cheese, four slices avocado, 1/2 keto chocolate chip muffin topped with full fat cream cheese, 1 cup coffee w heavy cream and coconut vanilla MCT oil powder

1:30pm

85% lean hamburger patty, iceberg lettuce as buns, basil, sliced cheese, 1/2 avocado, keto mayonnaise

sugar free dark chocolate topped with peanut butter

10:30am

shredded cabbage, two eggs, salt, pepper, cheese, small handful fried in toasted sesame seed oil

two slices bacon

keto cereal: 1 Tbsp chia seeds, 4 chopped pecans, 5 chopped almonds, apple pie spice, 3 Tbsp hemp hearts, heavy cream

2:30pm

keto lasagna: layer of keto marinara sauce, layer of pre-cooked asparagus and fresh baby spinach, layer of ricotta, 1 egg, basil, onion, cheese

served with a side of Swedish meatballs and Sriracha
